Chuck's Crab Cakes

1 large egg
1/2 cup mayonnaise
1/2 cup Panko Japanese-style bread crumbs
Dash of salt and pepper
Optional: fine diced scallions or roasted red peppers
1 lb. picked crab

Form patties (the size is up to you). Bake at 325 degrees for 12-16 minutes. Serve hot from the oven.

Short Ribs of Beef

1. Dredge 2 lbs. of beef short ribs in 4 TBS of flour,1 tsp of salt and 1/4 tsp of pepper
2. Brown meat in 2 TBS margarine and 1 TBS of olive oil until browned on all sides
3. Add 2 medium chopped onions--Cook until tender but not browned
4. All the following: 2 TBS brown sugar, 1/2 tsp dry mustard, 1/2 cup catsup, 1TBS vinegar, 1/2 cup beer, 1 cup beef bouillon
5. Cover and simmer until tender (Approximately 1 1/2 hrs)

Crock Pot "Favorite Chili"

1. 2 cans drained kidney beans
2. 2 cans (14 1/2 oz each) tomatoes
3. 2 lbs browned and drained ground chuck
4. 1 green bell pepper, coarsely chopped
5. 1 medium onion, coarsely chopped
6. 2 cloves of crushed garlic
7. 2 or 3 TBS chili powder ( for spicer chili add 1/4 to 1/2 teaspoon red pepper flakes or a few dashes of hot Mexican chili powder)
8. 1 teaspoon ground black pepper
9. 1 teaspoon cumin
10. 1 teaspoon salt
11. Put all of the ingredients in stoneware crock pot in the order listed. Stir once.
12. Cover and cook on LOW for 10 hours or HIGH for 6 hours

Turkey or Tuna Tettrazini

1. Saute 6 TBS chopped onion in 2 TBS oil until golden brown
2. Add 2 cans Cream of Mushroom soup and 1 can of water
3. Add 1/4 c. Parmesan and 2-3 cups Turkey cut in bite size pieces OR: 2 cans of tuna (flaked in bite size pieces)
4. Add 2/3 c. sliced olives and gently mix together with the above
5. Season sauce with 2 TBS parsley, 2 tea. lemon juice, a pinch of thyme, and a pinch of marjoram
6. Heat the sauce stirring gently
7. Cook 1/2 lb. of spaghetti or egg noodles (drain) and gently toss with the sauce

3 Cheese and Hamburger Bake
AKA: Aunt Martha's Company Casserole

Preheat oven to 375

1. Brown 1 lb Hamburger--drain and season with garlic powder and black pepper and add 2 8 oz cans of tomato sauce
2. Mix together 1 cup of cottage cheese; one 8 oz cream cheese; 1/4 cup sour cream; 1/3 cup chopped green onions
3. Cook 1/2 pound of egg noodles
4. In greased 3 quart casserole dish:
Layer 1/2 of noodles toped with all of the cheese mixture
Put the rest of the noodles on top of the cheese mix
Top with the meat sauce mixture
5. Bake at 375 for 45 minutes until warmed through

Orange Salsa Pork Chops

4 pork center cut loin chops (about 3/4ths inches thick)
1 tea. salad oil
1 c. orange juice
1/2 c. tomato salsa
2 Tbs. firmly packed brown sugar
1/4 tea. ground cumin
1/4 tea. ground ginger
salt
fresh cilantro sprigs
orange slices

1. Trim excess fat from pork. Heat a 10-12 inch fry pan with medium high heat until hot. add the oil and chops. Cook until browned on both sides. About 5 munutes total.
2. Add orange juice, salsa, sugar, cumin, and ginger. Bring to boil. Reduce heat to low and cover. Simmer until pork is tender (about 40min). Skim off fat and discard.
3. Transfer pork to a serving dish and keep warm.
4. Boil sauce uncovered until reduced to about 1 cup ( about 4 minutes).
5. Salt to taste
6. Serve sauce over each pork chop and garnish with cilantro and orange slices
